elevAte Your Lunchtime

elevAte salads 1Most days I’m 90% paleo in my eating choices. I do splurge on the occasional piece of cheese or beer (and yes, every now and again I’ll have a burger) but for the most part I’m all about the protein sources, fruits and vegetables. This means that most days for lunch I’m eating a salad. While these come in all sorts of shapes and varieties, they can also be really expensive and time consuming to create. Truthfully, I hate packing a lunch early in the morning or even the night before. It’s like picking out an outfit ahead of time – too difficult.

elevAte salads 2Recently I discovered elevAte organic salads (sold in the produce section at WalMart). These beauties are everything I look for in a salad and already pre-packaged so it take very little time and effort on my part.

The ingredients are fresh and organic so I can be assured that I am giving my body the very best. The variety of options is pretty impressive too. I tried both the Nutty Cranberry Superfood Salad (ingredients include: spring mix, feta cheese, walnuts, almonds, cranberries and a raspberry vinaigrette) and the Spinach Pow Salad (ingredients include: baby spinach, grilled chicken raised without antibiotics, Monterrey jack cheese, almonds, cranberries and a honey mustard dressing). Both were excellent – especially the Nutty Cranberry mix! The elevAte superfood line-up also includes ingredients like: ancient grains, plant-based proteins, nutrient-dense greens, legumes, and seeds that are rich in omega 3 and 6 fatty acids and full of naturally occurring vitamins and antioxidants.

elevAte salads 6The fact that these salads come perfectly packed, and easy to assemble are all major selling points in my opinion. The bowl is filled with the lettuce or spinach mix. On top of that in a little plastic plate are separated out the remaining ingredients. Don’t like something? You don’t need to mix it in. Want a little less dressing – that totally up to you too.

It’s all super fresh too. None of the lettuce or spinach pieces were wilted. The cheese and chicken were delicious. The almonds and walnuts were excellent.

elevAte salads 8When put all together the salads look amazing too. A couple students walked by while I was eating the salad and were jealous of my meal. Kids that don’t usually like salads were wondering how they could get one of their own.

Need another reason these are awesome? They retail for less that $3.50 each. I don’t know any restaurant that serves a fresh, organic salad for under $8, so these are a steal. It’s easy to stock up at the start of the week, leave them at work and just grab one each lunchtime. No need to break the bank buying organic items that will go bad when you don’t eat them in time, or suffering through the same salad with all the same ingredients since that’s what you bought for the week. And no need to create the salad at home, or lug all the ingredients to work to put them together once there. Through May 17th, the elevAte salads are on rollback at WalMart so you can stock up now.
